Sodium dehydroacetate is a safe preservative included under Regulation (EC) 1223/2009, Annex V. Its antimicrobial properties are limited to yeasts and fungi and are less effective on bacteria. It is active at an acidic pH. It is widely used around the world and is also found in environmentally certified products.
